There are so many diets out there and we are all wanting to be healthy and for our kids to be healthy. Is anyone out there a vegetarian or pescatarian? How do you find new recipes and ways to keep your kids wanting to eat?

When I was in highschool and college I was a vegetarian, must to the concern of my future Mother-in-law, not because of health reasons, but what was she going to feed me!

I fall off the vegetarian wagon when I married and now am finding I need to return to a more healthy style of eating so I am becoming a pescatarian or as our twinnie girls, (16), call it a flexiatarian, being flexible about I am going to cook tonight!

Our girls and I did a very strict vegan regime for Lent last year and I was the healthiest: blood test, weight I had been in a very long time, the girls even said they found themselves feeling better; but the regime proved to difficult to keep up: especially when trying to feed the meat eating men in our house.

I know it's hard to cook meals that everyone enjoys even when it's not "special." That's my downfall. I eat a can of tuna while the kids eat what they call "real" food:)
